Starbucks loves launching new drinks for Valentine's Day. Probably because they know lots of ladies would would to get an iced coffee instead of flowers from their loved one. Of course, coffee also makes a great gift for men!
Like most of their special launches (that aren't seasonal menu changes), these new 2026 Valentine's Day drinks are all made with ingredients
Which means you could technically already be ordering these drinks by telling your barista exactly what you want. But now you can ask for these strawberry drinks by name instead of listing out ingredients.
Or you can use my easy copycat recipes to make them at home! Today I'm sharing my recipe for the
This drink consists of cold brew mixed with vanilla syrup and topped with a white chocolate strawberry cream cold foam and chocolate shavings.
❤️ Why this recipe works
Balances bold and sweet flavors: this drink is perfect for anyone who wants a fun coffee drink, but still wants to taste the coffee and not all sweetness and milk. The strong cold brew keeps the drink from tasting like a milkshake, while the vanilla syrup and white mocha add just enough sweetness without overpowering the coffee.
Easy to control sweetness: but if the drink is too sweet for you, it's super easy to control the sweetness level when you make it at home. You can include less vanilla syrup in the coffee or use less flavoring in the cold foam.
Lots of options for making cold foam: I love using my countertop electric frother to make cold foams, but you can also use a hand mixer, a handheld frother, or even a simple mason jar.
Elements can be made in advance or purchased: this drink is so easy to prep in advance and then put together when you're ready to enjoy a cold brew. Several of the ingredients can be purchased or made from scratch and most can be done ahead of time.
🗒 Ingredients
Here's everything you need to make a copycat White Chocolate Strawberry Cream Cold Brew at home (be sure to view the recipe card at the bottom of this post for ingredient amounts and recipe instructions):
- Cold brew: you can brew your own cold brew or use Starbucks cold brew concentrate or another brand cold brew. If you don't have cold brew, you can use the iced coffee of your choice.
- Ice
- Vanilla syrup: you can make your own syrup using the recipe found here or you can purchase Starbucks vanilla syrup or another less pricey brand of vanilla syrup.
- White chocolate strawberry cream cold foam: I'll show you how to make this and share the ingredients needed below.
- Chocolate curls or shavings for topping
And here's what you need for the white chocolate strawberry cream cold foam:
- Heavy cream
- 2% milk
- Strawberry puree: I use this store-bought strawberry puree, but I also often make drinks with homemade strawberry puree, too.
- White mocha sauce: you can make your own, but I also highly recommend this white mocha sauce. Or you can spend a little more and get the white mocha sauce Starbucks actually uses. If you want to make your own, you can use the recipe in this post.
🧋 Recipe tips
This is one of the easier
- You can make the white chocolate strawberry sweet cream in advance and keep it in a mason jar or airtight container in your fridge. When you're ready for your drink, whip it into a cold foam (don't make the cold foam until right before you're planning to drink!).

- If you're making your own strawberry puree, you can also do that in advance. My Starbucks strawberry puree recipe matches
Starbucks ' (and store-bought) version really well!

- If you don't have a frother, you can make your cold foam in a blender or with a hand mixer. You can even just keep it in the mason jar and shake it vigorously. Your foam won't be quite as voluminous, but it will still give you a nice froth.

- I played around with the ratios of ingredients in this cold foam quite a bit as the white mocha sauce and strawberry puree dilute it more than syrups do and think I got the right amount of flavor in a cold foam that will still froth up nicely. But feel free to adjust if you want more white mocha flavor or more strawberry flavor.
- Make sure your cream and milk are very cold when you make the cold foam as cold dairy will whip and froth much better than room temperature.

- I recommend using your favorite cold brew for this since the coffee truly shines. Lots of people like making their own, but I also really like Starbucks cold brew concentrate.
- The foam adds a nice amount of sweetness to the coffee, so don't over-do it on the vanilla syrup when you're mixing it into the cold brew. You can always add more!

- You might think this drink is going to be too bold or coffee-forward, but the cold foam doesn't just sit on top of the drink; it drizzles into the coffee making it deliciously creamy, even if you're the kind of person who generally takes your coffee with extra milk or cream. In my opinion, it's the perfect balance!
- The foam will have just a slightly pink hue since it only has a dash of strawberry puree in it. You can always add a touch of red food coloring if you want a more bold cold foam.

- Feel free to take this recipe and adjust everything to your own tastes! I try to make my recipes as close to
Starbucks as possible, but one of the best things about making the drinks at home is that you can do anything you want to them!
🎉 Variations on recipe
And here are some fun ideas for what you can do to this White Chocolate Strawberry Cream Cold Brew:
- Stir a little white mocha sauce or regular mocha sauce into the cold brew if you like a sweeter, more chocolate-forward drink.
- If you want to skip the white mocha sauce in the cold foam, you can add vanilla syrup instead.
- If you prefer less sweetness, omit the vanilla syrup in the coffee and rely only on the cold foam for sweetness.
- Swap the vanilla syrup in the coffee for the flavor of your choice. I especially recommend using strawberry syrup.
- If you don't have strawberry puree and don't want to make it, you can use strawberry syrup in the cold foam instead.
- Top with white chocolate shavings, freeze-dried strawberries, or mocha sauce.

The whi chocolate-covered strawberry vibes of this iced coffee are so perfect for celebrating Valentine's Day!
But honestly, this drink works for any time of year.
