Happy Valentine's Day weekend! I know some people think it's a bit of a silly holiday, but I say any chance to spread a little extra love is a welcome one.
It's also a good opportunity to cook a special meal and serve it to your loved ones. I always prefer to stay home on Valentine's Day rather than go out in the crowd... and that's especially true this year.
But don't worry; special doesn't need to mean difficult... Even though this steak and shrimp scampi for two looks pretty fancy, it's actually incredibly easy to make. Anyone can do it, even if you don't consider yourself a cook! Trust me, your Valentine will be very impressed.
❤️ Why you'll love this recipe
If you're looking for a special dinner that's really impressive, but also pretty simple, you need to try this steak and shrimp scampi!
It's the perfect dinner for two and great for serving on Valentine's Day or an important anniversary. Of course, it also makes for a sweet weekend dinner when you want the vibes to be a little bit more romantic.
🗒 Ingredients
I went to Shaw’s Supermarket to get all the ingredients I needed for this dish (plus some little treats to make my dinner even more sweet!). They have an amazing selection of fresh meat, seafood, floral, produce and bakery offerings that will help make your Valentine's dinner extra special.
For the steak and shrimp scampi, I purchased a bag of jumbo frozen shrimp and ½ lb. NY strip steak. Here's everything you need for the complete dish:
- Linguine
- Unsalted butter
- Olive oil + an oil with a higher smoke point, like canola. or avocado
- Minced garlic
- Red pepper flakes
- Jumbo shrimp (or size of your choice), peeled and deveined
- Salt (coarse)
- Pepper
- White wine or chicken broth
- Lemon juice
- Parsley
- NY Strip Steak
🍤 How to make steak and shrimp scampi for two
There are a couple steps to this recipe since you need to cook both the shrimp and the steak, but each step is really quick! I recommend having all your ingredients chopped, organized, and ready to go before you start cooking.
To start, add linguine to a large pot of salted boiling water and let cook until al dente, about 7 minutes. Drain well.
While pasta is cooking, add butter and olive oil to a large skillet over medium heat. Add garlic and red pepper flakes and cook for one minute taking care not to let garlic burn.
Add shrimp, salt, and pepper to pan and cook, stirring frequently, until shrimp are pink, about 5 minutes. Remove shrimp to a plate and set aside.
Stir in white wine (or chicken broth) and lemon juice and cook for 1 minute. Remove skillet from heat and stir in parsley.
Add linguine and shrimp back to skillet and toss to coat in sauce.
The shrimp scampi portion of the meal is done and all you have left to do is make the steak.
It's quick and simple, so you can either do it while your shrimp is cooking or keep the shrimp and pasta warm while the steak is cooking.
🥩 How to make garlic butter steak
Cooking the steak is also really easy. The toughest part is making sure you're cooking it to your desired doneness. I recommend having a meat thermometer on hand so you can easily see what temperature your steak is at.
I love NY strip steak, but you can use any cut you want for this recipe. If you're having trouble deciding, ask the butcher at your local Shaw's for advice!
Heat a large cast iron pan over high heat and sprinkle steak with salt and pepper. When pan is hot, brush steak lightly with oil (I recommend an oil with a higher smoke point, like coconut oil, canola oil, or avocado oil).
Place steak in pan and cook for about 3-4 minutes on each side, until cooked to desire doneness (should be about 135 degrees for medium rare and 140 degrees for medium).
While steak is cooking, mix butter and garlic together in a small bowl.
Top the steak with garlic butter and slice it (against the grain).
Divide the linguine and shrimp between two dishes and top with the garlic butter steak. Sprinkle on some more chopped parsley, too.
Valentine's Day dinner is served!
Of course, shrimp scampi is always a wonderful dish and garlic butter steak is perfection on its own... But isn't there just something so special about surf and turf? I feel like it automatically signals a special occasion and makes any dinner feel fancier.
This steak and shrimp scampi is so easy to make, but it will impress your dinner guest so much!
🥗 What to serve with steak and shrimp pasta
This pasta dish is a pretty hearty meal as is, but there are still plenty of sides that go wonderfully with it.
I wanted to serve a green vegetable alongside it, so I picked up some fresh broccoli at Shaw's and roasted it. Green beans would be a great side, too. I also bought a loaf of Italian bread and made a super simple garlic bread (because pasta always calls for a side of garlic bread!).
Here are some recipes that would be great as sides:
- Caramelized Mushrooms
- Blistered Green Beans
- Lemon Pepper Asparagus
- Bacon Parmesan Brussels Sprouts
- Roasted Cauliflower Salad
- Chick-Fil-A Kale Salad
- Shaved Asparagus Salad
- Winter Kale Salad
- Brussels Sprouts Caesar Salad
Valentine's Day is also a great time for opening a nice bottle of wine if you drink. I'd usually recommend white wine for shrimp scampi, but with the steak involved, red wine works well, too. However, if you used the white wine listed in the ingredients to make this scampi, you may as well serve the rest of it!
And don't forget about Valentine's Day (or any special occasion) dessert! I purchased those pretty Valentine's Day cookies from Shaw's bakery and also bought some beautiful strawberries and dipped them in chocolate and sprinkles.
I also picked up a bouquet of pretty pink roses. They have a great selection of fresh flowers and right now that have lots and lots of roses. Even if you're not cooking, chocolate-covered strawberries and fresh flowers make the perfect gift for loved ones on Valentine's Day.
This dish was so easy that I think I'm going to be making steak and shrimp scampi for more than just special occasions moving forward.
But shhh you don't have to tell your Valentine how easy it was to make this. Let them think you were busy working over a stove all day. It can be our little secret!
