This slightly creamy tropical Blueberry Coconut Margarita will make you feel like you're on a beach... But it can easily be made in your kitchen with just blueberry simple syrup, tequila, and coconut milk!
My latest obsession involves buying blueberries whenever they're on sale. I literally cannot walk by the blueberry section of my grocery store's produce department without grabbing two pints when they're two for $5.
And while I generally don't have a problem eating them by the handful, I occasionally purchase a few too many containers and suddenly realize they're apt to go bad pretty quickly. My solution? Blueberry simple syrup.
This Blueberry Vodka Lemonade is one of the most popular recipes on my blog and I make it for myself and Chris all the time. But I've been craving coconut lately and had a half a can of coconut milk sitting in my fridge waiting to be used.
I decided to shake the coconut milk up with some blueberry simple syrup, tequila, and lots of ice and ended up with this slightly creamy, totally tropical blueberry coconut margarita.
🫐 How to make blueberry simple syrup
I almost always have multiple jars of simple syrup in my fridge at all times, but this summer I've had a permanent stock of blueberry simple syrup in particular. I have a whole post on how to make it.
In addition to making lots of fancy cocktails with it, blueberry simple syrup is also yummy stirred into vodka, gin, tequila, or rum... And if you want to stay non-alcoholic, you can also mix it into soda water for a quick and easy mocktail.
Making it is SUPER simple... Hence why it's called simple syrup! All you do is combine sugar, water, and blueberries into a saucepan, bring to a boil, and then let simmer for 10-15 minutes, until blueberries have burst and the mixture thickens.
Strain out the berry mash and let the syrup cool a bit before pouring it into a jar or bowl to cool completely.
I will forever love the color of this blueberry simple syrup.
🍹 How to make blueberry coconut margaritas
Margaritas are probably my husband's favorite drink in the world. He loves going out for Mexican food and even when we're home, he'll randomly proclaim, "let's have a margarita night!"
He loved the idea of a blueberry margarita, but wasn't totally sold on the coconut milk aspect. I get it... Dairy and alcohol can be a weird combination. But I promise it works here!
And this blueberry coconut margarita is also very easy to mix up. Simply add coconut milk, blueberry simple syrup, and tequila to an ice-filled shaker and shake well. Shake really well because you want to make sure the coconut milk doesn't have any errant clumps in it.
Then strain into an ice-filled cocktail glass... One preferably with a salted rim. But if you're not into salted rims, a sugared rim works really well here, too! Also be sure to include a fresh blueberry garnish.
Cheers! I would say you're probably most used to seeing coconut milk used in rum-based cocktails, right? But it also makes for a fabulous margarita with tequila!
I know there are actually a few coconut tequilas on the market and I bet one of those would be delicious in this blueberry coconut margarita, too, but I actually really like the subtle coconut-iness (can that please be a word??) that the coconut milk brings this cocktail.
Chris is a big fan and every time I tested this recipe, I gave one to him to solicit his feedback. The coconut flavor is very subtle and it brings an extra tropical kick to what could be a regular old blueberry margarita.
And the creaminess! The coconut milk gives this margarita the perfect touch of smooth creaminess. It would be even creamier if I had used coconut cream, but I wanted to keep the cocktail a bit on the lighter side.
OK, and how can you not love the color of these blueberry coconut margaritas?? That's probably another reason I love using blueberry simple syrup so much; it makes for some stunning cocktails!
And I love how the coconut milk gives it a pastel purple tone.

Blueberry Coconut Margarita
Ingredients
- Sea salt or coarse sugar, for rimming glasses (if desired)
- 2 oz tequila
- 2 oz coconut milk (from a can), well shaken
- 2 oz blueberry simple syrup
- Ice
Instructions
- If you want to rim your glass, place sea salt or coarse sugar on a small plate and lightly brush simple syrup around rims of glass. Dip rim on the plate of sea salt/sugar to coat.
- In a shaker filled with ice, add tequila, coconut milk, and blueberry simple syrup. Shake really well.
- Pour drink into an ice-filled glass and garnish with fresh blueberries, if desired.
Notes
- You should be able to make about 6 cocktails with 1 batch of simple syrup.
