Starbucks started launching banana bread drinks earlier in 2026 and I'm so excited to see they're continuing to add to the lineup for fall 2026. I loved the Iced Banana Bread Matcha, but this Iced Banana Bread Latte is my favorite banana drink yet!
The actual coffeeshop drink is made with banana flavored syrup with a brown sugar cold foam and cinnamon dolce sprinkles on top and that's exactly what I set out to recreate here. When these ingredients are combined, they taste just like banana bread!
It's an easy drink to make and a great fall alternative to anyone who doesn't care for a whole season of pumpkin drinks.
❤️ Why this recipe works
It's the perfect combination of ingredients: banana syrup, brown sugar cold foam, and a cinnamon sugar topping combine into fresh-from-the-oven banana bread flavor.
Blonde espresso makes the drink smooth: blonde roast is lighter and less bitter than a standard roast, so the banana and brown sugar get to shine instead.
It's easy to customize: there are lots of additions and modifications you can make to this iced latte to cater it to your tastes. It's also easy to make sweeter or less sweet depending on what your tastes are. And I share a super fun bonus upgrade with you!
It's quick and easy to make: once your syrups are made and chilled or purchased, the drink itself takes about two minutes to build.
🗒 Ingredients
The Iced Banana Bread Latte has a few different components to it, but each is easy to make or purchase. Here's everything you need (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Brewed blonde-roast espresso: you can use strongly brewed coffee if you prefer.
- Banana syrup: you can make my homemade banana syrup or you can purchase a bottle of banana syrup.
- Ice
- 2% milk: or the dairy/non-dairy alternative of your choice
- Brown sugar cold foam: recipe shared below
- Turbinado or raw sugar and ground cinnamon: for topping. If you prefer, you can use a store-bought mix.
And here's what you need for the brown sugar cold foam:
- Heavy cream
- 2% milk
- Brown sugar syrup: you can make your own with my brown sugar syrup recipe or you can purchase a bottle of brown sugar syrup.
🍌 Recipe tips
- Starbucks used to use freeze-dried banana powder in their cold foams, but they since swapped to using a banana syrup, which blends into drinks much better, too.
- I've also made this drink with homemade banana bread syrup and I think it's even more delicious this way! Recipe is coming soon.
- If you're making your own syrups, you can do so in advance. Both will keep well in your fridge for about a month.

- You can make the brown sugar sweet cream in advance and keep it in a mason jar or airtight container in your fridge. When you're ready for a latte, whip the sweet cream into a cold foam.
- Cold foams froth up best with really cold ingredients, so make sure you use cream and milk right out of the fridge. And if you make the sweet cream in advance, keep it chilled until ready to use.


- Don't skip the cinnamon dolce sprinkles on top. It is a small thing, but that sprinkle is a big part of what makes each sip taste like banana bread. I just mix ground cinnamon and raw sugar together (you can also use sparkling/coarse sugar).

I didn't expect to be choosing banana drinks over pumpkin and apple drinks this fall, but here we are.
There is something about banana bread that just feels like a cozy hug and enjoying it in iced latte form is perfect for the transitioning weather. It goes without saying that this goes wonderfully with a slice of easy banana bread.
🎉 Variations on recipe
I love that this iced latte tastes like homemade banana bread! But there are a few different modifications you can make to it that may cause you to become even more obsessed:
- Use a banana bread syrup instead of plain banana syrup: for even more banana bread flavor, simmer bananas with brown sugar, cinnamon, and a pinch of salt into a homemade syrup and use it in place of the banana syrup.
- Make it dairy-free: use oat milk in the drink and swap the heavy cream in the foam for a barista-style oat milk or coconut milk. It will be a little less thick but still tasty.
- Make a hot latte instead: skip the ice, steam the milk, and stir banana syrup and a little brown sugar syrup right into the warm milk and espresso. Top with cinnamon dolce sprinkles.
- Turn it into banana nut bread: add a splash of hazelnut syrup along with the banana. The toasty, nutty note gives you great banana nut bread flavor.
- Blend it into a Frappuccino: blend the espresso, banana syrup, milk, and about a cup of ice until smooth for a banana bread frappuccino, then pile the cold foam and cinnamon sugar on top.
- Make it a double: add an extra shot of espresso if you want a little more coffee to stand up to all that sweet banana and brown sugar.
- Adjust sweetness: make the drink sweeter or less sweet depending on your preferences (in my opinion, this is a very sweet drink!)

Iced Banana Bread Latte {Starbucks Copycat}

Ingredients
- 2 oz brewed blonde espresso or strongly brewed coffee slightly cooled
- 2 tablespoon banana syrup (store-bought or homemade with recipe linked in notes)
- Ice
- 6 oz 2% milk (or dairy/non-dairy alternative of your choice)
- ⅓ cup brown sugar cold foam (recipe below)
- 1 tablespoon turbinado or raw sugar
- ½ teaspoon ground cinnamon
Brown Sugar Cold Foam
- ½ cup heavy cream
- ⅓ cup 2% milk
- 2 tablespoon brown sugar syrup (store-bought or homemade from recipe linked in notes)
Instructions
- Add espresso and banana syrup to a glass filled with ice.
- Add milk to glass. Stir if desired.
- Top the drink with about ⅓ cup of brown sugar cold foam.
- Stir the sugar and cinnamon together and sprinkle over the foam.
Brown Sugar Cold Foam
- Add cream, 2% milk and 2 tablespoon brown sugar syrup to a mason jar (or other airtight container) and shake vigorously. Or mix all ingredients in a bowl until well combined. This is your brown sugar cold cream. Keep it in the fridge until you're ready to turn it into cold foam right before using.
- To turn into foam, you can either use an electric frother, hand mixer, or blender with ⅓ cup cream at a time. Alternatively, you can shake the mixture vigorously in a mason jar until it's frothy.
Notes
- Use this homemade banana syrup recipe.

- You can also top with a store-bought cinnamon sugar mix.
- Cold foam yield: one batch makes enough to top about 3 drinks (each drink gets about ⅓ cup). Make the foam fresh the day you plan to use it.
- Feel free to add more or less syrup to the drink depending on your own preferences.
