If there's an edible cookie dough to be made, you know I'm going to make it! Because, in my eyes, there's no sweet treat that's more delicious than cookie dough you can eat with a spoon.
I've been making Lucky Charms cookie dough bars for years and they're great for bringing to parties, especially around St. Patrick's Day. But when I'm sitting on the couch and craving something sweet, sometimes I just want to grab a spoon and dig in.
This Lucky Charms cookie dough is absolutely packed with your favorite cereal flavor, but so, so much more delicious.
❤️ Why you'll love this recipe
If you're a fan of both cookie dough and Lucky Charms, this is the recipe for you! It's ridiculously easy to make by just mixing together the ingredients.
Not only is the toasted oats part of the cereal mixed right into the dough, but there are plenty of rainbow colored marshmallows mixed in, too.
This cookie dough is different than the cookie dough bars I already have on my blog as I blended the oats into the dough instead of using them as the crust. It's also a big softer than the firm doughs I like to make for my bars. It's meant to be eaten with a spoon!
Kids will love this edible cookie dough and it's the perfect way to celebrate St. Patrick's Day with them. You can even tell them the leprechauns left it for them.
🗒 Ingredients
You don't need too many ingredients to whip up this Lucky Charms cookie dough and you can feel free to add-in any extras of your choice! Here's everything you need (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Unsalted butter
- Granulated sugar
- Vanilla extract
- All-purpose flour: be sure to see notes below on how to heat treat for safety
- Crushed toasted oats from Lucky Charms (no marshmallows)
- Milk
- Lucky Charms marshmallows
If you don't feel like picking all the marshmallows out of your Lucky Charms, you can purchase an entire bag of just marshmallows (they're great for snacking, too!).
🥣 How to heat treat raw flour
This edible cookie dough is a no-bake recipe since you're not baking any cookies with it... But I actually do recommend heating the flour before you use it.
A lot of people don't know that it's actually the flour and not the raw eggs that is often the cause of foodborne illness in raw cookie dough.
Raw flour can have bacteria in it that can lead to illnesses like E. coli (source). To ensure your raw cookie dough is safe to eat, you should always bake your flour before using it.
Don't worry, it's easy! But if you don't want to do this, you can actually purchase flour that's already been heat treated.
It's super easy to do and definitely worth the precaution (though I will say I've been making edible cookie dough for years before I knew this and never got ill).
🍪 How to make Lucky Charms cookie dough
The rest of the Lucky Charms cookie dough making process is super easy. For me, the toughest part is crushing the oat cereal.
I typically put it in a Ziplock bag, put a towel over it, and use a meat tenderizer to crush it into as fine a dust as possible.
Then put the butter and sugar in the bowl of a stand mixer (or in a large bowl with a hand mixer or with a lot of elbow grease) and cream them together until light and fluffy, 3-5 minutes.
Mix in vanilla and salt.
And slowly beat in the flour and crushed cereal until combined.
Mix in the milk.
And fold in the Lucky Charms marshmallows.
You'll probably want to grab a spoon and dig in right away. I always do. Sometimes I take the time to serve it into bowls, but usually I just take a spoon to the mixing bowl.
Holy moly, this tastes like the most delicious bowl of Lucky Charms cereal ever. It's packed with sweetness, oat flavor, and marshmallow flavor.
It practically melts in your mouth and is totally addictive.
This will make both kids and adults really, really happy. Of course, for St. Patrick's Day, but really, there's no wrong time of year for Lucky Charms!
⏲️ How to store
Store the Lucky Charms cookie dough in an airtight container in the fridge. Cookie dough should stay fresh for 5-7 days when stored properly.
You can eat it chilled (it's really good this way!) or let it come to room temperature a bit before enjoying.
🎉 More add-ins
I love this cookie dough as is because it tastes just like Lucky Charms and really doesn't need anything else. However, you can always load cookie dough up with anything you want! Here are some more fun add-in ideas:
- White chocolate chips
- Semisweet or dark chocolate chips
- Marshmallow fluff swirls
- Peanuts
- Chopped pretzels
- Peanut butter
- Fudge sauce
- Rainbow sprinkles
👩🍳 Can I use alternative flours?
You can use alternative flours for this edible Lucky Charms cookie dough, but note that many will change the density of the dough and may impact the flavor of the recipe. You may need to add less flour and/or more milk, depending on what flour you're using.
Here are some ideas:
- Oat flour: I love the idea of using oat flour because it will play well with the oat flavor of the Lucky Charms cereal. I would use the same amount as all-purpose, but you may need to add more milk. It may make the dough a bit chewier.
- Almond flour: I recommend starting off with less almond flour and adjusting as you mix. Will likely add a nutty flavor.
- Coconut flour: you'll also want to start off with less coconut flour since it can absorb liquid more than all-purpose. Will likely add a coconut flavor, which I think will complement the marshmallow flavor quite well.
- Whole wheat flour: I would also start off with a little less whole wheat flour. It will likely add more whole grain flavor to the cookie dough.
🌈 More Lucky Charms recipes
I especially love making Lucky Charms recipes at St. Patrick's Day, but also make them all year-round since the cereal never really goes out of season.

You can even incorporate the cereal into more cereal for Lucky Charms Oatmeal!

I don't know about you, but if this little bowl of cookie dough could be found at the end of a rainbow instead of a pot of gold... I'd be perfectly happy with that.
