This simple-to-make Pineapple Banana Ginger Smoothie Bowl is the perfect way to start your day. Not only is it packed with vitamins and antioxidants, but it's like a vacation in a bowl!
Doesn't it blow your mind how new foods that aren't really new foods at all become a thing? Avocado toast, for example. Both avocados and toast have been around forever, but someone decided to spread avocado on a piece of toast and Instagram it and suddenly it's a thing. The same is true for smoothie bowls. Both smoothies and bowls have been"things" for a long time, but suddenly they're combined and everyone is talking about them. At least the cronut is actually a hybrid baked good and not just a croissant served on top of a donut, which is essentially what avocado toast and smoothie bowls are. I need to make it my mission to combine two totally normal food (or dish) items and make them a phenomenon. Or maybe I'll just work with what's already out there. Would anyone care for a toast bowl? Or an avocado toast smoothie? Work with me here!
OK whatever; the truth is, I don't have a lot of experience with smoothie bowls. And yes, I could have just as easily made a smoothie in a glass, but when you're smoothie-ing for a meal, eating it with a spoon out of a bowl instead of sipping it out of a glass just feels so much more substantial and meal-like. Plus, you have way more surface area to add fruit on top! Also, lots of shredded coconut and candied ginger, in my case.
PINEAPPLE BANANA GINGER SMOOTHIE BOWL RECIPE
I didn't even take any process photos of this recipe while I was making it because... you basically just throw everything in a blender and then pour it into a bowl. As easy as a smoothie!
While I love everything about the tropical flavors of this smoothie bowl, it's really the ginger that makes this smoothie bowl what it is. Ginger is one of my favorite things in the whole world and I'm pretty sure that as time goes by, I get more and more obsessed with it. Not only is it delicious, but ginger has tons of health benefits, too. It's great for your digestive system, has antibacterial properties, can help with pain and inflammation, controls high blood pressure, and more. I eat a ridiculous amount of it whenever I have sushi, but I feel like it's a pretty underutilized food. Watch out because I think I'm going to start incorporating it into more and more of my recipes.
In addition to the glorious tablespoon of ginger in this mix, the pineapple, banana, kiwi, coconut milk, and coconut flakes are such a tropical delight. Really, this smoothie bowl is also totally making me crave a tropical vacation ASAP. And while I would like to spend much of my tropical vacation drinking frozen cocktails on the beach, I think that starting each day with a ginger smoothie bowl on the beach would be ideal. Could you really ask for anything more? Wait. Would you judge me if I put tequila in this smoothie bowl? Don't answer that... Pretend I never asked.
Ahem. Anyway, yes you eat this smoothie bowl with a spoon. It feels like an actual meal, instead of like a big glass of healthiness. I know y'all might not have a lot of the time to sit down to a smoothie bowl for breakfast, but this is so quick to make that I hope you can reserve five minutes or so to enjoy it. Or save the recipe for a weekend when you overindulged a bit the night before and need a little bit of a detox.
So, even though it totally boggles me that smoothie bowls weren't a thing a few years ago, I'm completely on board with them now. But it really makes me wonder what concepts I'll be cool with in the coming years.... Avocado donuts? Nah, I wouldn't need any convincing for those (psst I already Googled them and they're already a "thing,"just not a "thing thing" if you know what I mean). Fineee, I'm going to start making my smoothies in sheet pans. Take it from me, friends, smoothie sheet pan breakfasts are going to be the next big thing. You'll be eating them with a spatula.
But for now, just stick to this Pineapple Banana Ginger Smoothie Bowl. It will get your day off to a great start and help you power through the week. OK and maybe make you lust over a tropical vacation a little bit. Sorry not sorry.

Pineapple Banana Ginger Smoothie Bowl
Ingredients
- 2 cups frozen pineapple pieces
- 1 frozen banana, sliced, plus more banana slices for topping
- 1 Tbsp grated ginger
- 1 cup coconut milk (the kind in the carton)
- Sliced kiwi, for topping
- Candied ginger, for topping
- Coconut flakes, for topping
Instructions
- In a blender, pulse together pineapple, banana and ginger with coconut milk, until smooth. Mixture should be thick.
- Pour into two bowls and top with sliced banana and kiwi, candied ginger, and coconut flakes.

Did you use the coconut milk from a can or the kind that comes in a carton? It's so confusing that they are called the same thing and I never know which one to use.

@Mia- You could use any dairy or dairy alternative you choose! I don't find coconut milk (the kind in the carton) too coconut-y, but I can definitely see why you may not love it! If you drink regular milk, soy milk, or almond milk, those should be just as delicious 🙂
