One of my favorite hobbies is browsing my grocery store's ice cream freezers. I especially love seeing what new offerings Ben and Jerry's has. And buying and trying them, obviously.
A couple months ago, I discovered Ben and Jerry's Marshmallow Sky ice cream. And I immediately knew I needed to create a marshmallow ice cream of my own.
Their's is blue, but I wanted to keep mine pure white like marshmallow clouds... Without the sky. Instead of having chewy marshmallows in the ice cream, I infused the flavor right into the base and then incorporated marshmallow creme (AKA Fluff) into it.
I also wanted to keep it simple and easy to make. This is an no-cook, egg-free marshmallow ice cream and it's the perfect summertime treat!

If you're a marshmallow lover, you're going to be obsessed with this ice cream. Not only is the ice cream based infused with actual marshmallows for SO much flavor, but there's a swirl of marshmallow fluff incorporated into it, too.
The ice cream is so easy to make in about 10 minutes; the hardest part is waiting for it to chill a couple times! You do need an ice cream maker to churn it, but it doesn't require any cooking since no eggs are involved.

Since this is a pretty simple ice cream, it's a pretty simple ingredient list! Here's everything you need (be sure to check out the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Heavy cream
- Whole milk
- Granulated sugar
- Salt
- Mini marshmallows
- Vanilla extract
- Marshmallow creme/fluff
🍦 How to make marshmallow ice cream
The marshmallow ice cream making process is incredibly easy.
The only active work you really need to do is mixing the ingredients together.
In a large bowl, whisk together heavy cream, milk, sugar, and salt until combined.
Add in the mini marshmallows and stir until everything is combined.
Now, cover the bowl and let the mixture chill in the fridge for at least 4 hours, stirring on occasion.
All of that delicious marshmallow flavor is infusing itself into the creamy ice cream base.
Now that the ice cream is perfectly marshmallow flavored, strain the marshmallows out of the mixture.
You can save them for another use if you want. Like maybe topping the finished ice cream with.
Give the base a taste and you'll think it's perfect! But don't forget you're going to add even more marshmallow flavor into it with some fluff/marshmallow creme.
Pour the strained milk and cream mixture into your ice cream maker.
Process according to manufacturer's directions, likely running for about 20 minutes.
When ice cream is almost done processing, spoon the marshmallow creme (I'm from New England, so it's always Fluff to me!) into mixture and let it swirl in.
Once it's done processing, transfer the ice cream into containers and freeze for at least 4 hours before serving.
I know; the waiting is the hardest part.
But it's so worth it because this finished marshmallow ice cream is delicious creamy and cloud-like with ALL of the marshmallow flavor you love.
There's something about marshmallow flavor that takes me right back to my childhood. Its subtle vanilla undertones and pronounced sweetness are so nostalgic and comforting.
And sometimes we need an ice cream like that.
I typically love ice creams packed with chocolate, candy, cookie dough, and other delicious add-ins. But this one is simply pure creamy marshmallow delight.
Because it doesn't have a custard base, this ice cream is a little more soft and melty than others I've made, but it really matches the feel of marshmallows.
⏲️ How to store
I recommend storing this marshmallow ice cream in an airtight container in your refrigerator. When stored properly, it should keep fresh for about a month.
Make sure the temperature of your freezer is well-regulated as fluctuations can cause freezer burn.
🎉 Variations on recipe
As I mentioned, I love the this ice cream as simple and pure as it is. The most I do is add mini marshmallows to the top of it. But if you prefer your frozen desserts with a little more oomph to them, there are so many ways to take marshmallow ice cream to a whole new level!
Here are some ideas:
- Mix in chocolate chips or white chocolate chips.
- Turn the ice cream into a s'mores ice cream by mixing in chocolate pieces and crushed graham crackers (or you could make my s'mores ice cream recipe).
- Drizzle marshmallow fluff, chocolate fudge sauce, or caramel sauce over the top.
- Instead of classic marshmallows, mix in flavored marshmallows, like peppermint.
- Mix in shredded coconut for a tropical flavor. Toast the coconut for a richer flavor.
- Add your favorite candy, like M&Ms or chopped Milky Ways.
- For some crunch, add nuts like walnuts or pecans.
- Add fruit like frozen strawberries, raspberries, or blueberries.
- Add a peanut butter swirl.
- Top it with crushed candy canes to turn it from a summer dessert to a Christmas treat.
