Rainbow sprinkles make everything happier. They're bright and fun and symbolize celebration in a major way.
They also add a little sweetness to everything they're added to. And they work so perfectly in vanilla ice cream.
This sprinkles ice cream is a delightfully simple recipe that's perfect for anyone who needs a little extra happy in life. It's also a dream birthday party ice cream and complements nearly every flavor of cake.
💜 Why this recipe works
Simple recipe: though this is a churned ice cream recipe (meaning it requires an ice cream maker), it's incredibly simple, calling for just a few ingredients and a few easy steps.
Lots of chilling time: it can be tough to wait for this dessert to be ready, but all the chilling time means the ice cream will be super light and fluffy, while still being firm enough to scoop.
Perfect sprinkle timing: the sprinkles are added to the ice cream at the end of the churning time, so their colors don't bleed into the mixture too much and stay looking pretty and they keep their slight crunch.
Makes vanilla ice cream more celebratory: while vanilla ice cream is a favorite flavor, it can really be a bit boring, especially for celebrations. Adding rainbow sprinkles makes it more fit for a birthday or other festivity, while still retaining that beloved vanilla flavor.
🗒 Ingredients
The ingredients for my sprinkles ice cream are very straight-forward and hold true to traditional churned ice cream ingredients.
Here's everything you need (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Heavy cream
- Whole milk
- Granulated sugar
- Salt
- Vanilla extract
- Rainbow sprinkles: these are my favorite rainbow sprinkles for their vibrant colors (bonus that the colors don't bleed much!)
🍦 Tips for making sprinkles ice cream
- You may not think it's important to chill your ice cream base since your ingredients are likely already cold. That initial chill will give the sugar and vanilla flavors time to marry. And your machine will be able to whip more air into your base if it's super cold (which results in a lighter, fluffier ice cream).
- Make sure your ice cream bowl is chilled very well. I've even noticed that when I keep my bowl in my garage freezer, my ice cream is icier and less creamy than when I keep it in my kitchen freezer (my kitchen freezer is colder than my garage freezer!).
- Use high-quality rainbow sprinkles to prevent color bleeding. Also, because this ice cream is fully loaded with sprinkles, you want to be sure they actually taste good. These are my favorite rainbow sprinkles because they taste fresh and are simply sweet.
- Wait until your ice cream is almost fully churned in your ice cream maker before adding sprinkles.

- Feel free to sprinkle extra sprinkles into the ice cream as you transfer it into an airtight container.

- Once in an airtight container, let your ice cream freeze for at least 4 more hours, so it can really firm up.

- Serve ice cream with even more rainbow sprinkles on top. Obviously.
Yes, you really have to like sprinkles to enjoy this frozen dessert. It's such a pretty and fun treat!

Plus, it really is the perfect ice cream to serve for a birthday party or other celebration. The classic flavors go well with birthday cake and the ice cream just screams fun.
🎉 Variations on recipe
This sprinkles ice cream is so simple, but that doesn't mean you can't add your own twist to it!
Here are some fun ideas for variations and add-ins:
- Use any kind of sprinkles you want. You can make this ice cream for any holiday by simply swapping out the rainbow sprinkles for different colors and shapes.
- Make chocolate sprinkles ice cream. Simply replace ⅓ cup of the sugar with ⅓ cup unsweetened cocoa powder.
- Add white chocolate chips for even more sweetness. You can also add semisweet or dark chocolate chips if you prefer.
- Mix in mini marshmallows or marshmallow fluff.
- Use cereal milk for the ice cream base. I especially like the idea of Fruity Pebbles cereal milk for this recipe.
- Add crumbled up birthday cake to make this an even more perfect birthday ice cream.
- Add cookie pieces. Chocolate chip, Oreo, Golden Oreo, or shortbread would all be delicious.
Really, you can add absolutely anything you want to this ice cream!

Just be sure not to skimp on the sprinkles.
