Do your breakfast habits change with the seasons? Mine don't really... I still enjoy cold breakfasts in the winter and hot breakfasts in the summer. But, of course, I do like to add seasonal ingredients in when possible and love eating lots of berries in the warmer months, pumpkin and apples in the cooler months, and eggnog during the holiday season.
And frozen cocktails where appropriate. Wait, what? Cocktails and healthy breakfasts sound like a bit of a contradiction, right? But when done appropriately, you can enjoy the flavors of your favorite summer drinks in breakfast form. Sans alcohol. This Piña Colada Bircher Muesli is the perfect example!
I'm a huge fan of bircher muesli and have been making my own at home for years (this is the recipe I use). Once in a while, I like to switch up the ingredients that go into it to jazz it up a bit. This time I decided to make a version that tastes as close to one of my favorite frozen cocktails as possible.
Don't worry; there's no actual rum in this breakfast cereal. But this bircher muesli is loaded with pineapple and coconut flavors, plus lots of healthy grains that will get your day off to a great start.
This breakfast should be made a day before you want to eat it (or at least 4 hours before). It's super easy to assemble the night before and in the morning, all you have to do is mix in the yogurt and pineapple juice.
Ingredients in Piña Colada Bircher Muesli
You can feel free to switch up anything in this recipe (especially the grains) and/or use different amounts. But this the combination that I think is most reminiscent of a piña colada! Here's what I added into my bircher muesli:
- Old-fashioned oats
- Wheat germ (you can also use bran)
- Ground flaxseed (you can also use whole flaxseed)
- Dried pineapple
- Sliced almonds
- Coconut flakes
- Unsweetened coconut milk (the kind in the carton kept in the refrigerator)
- Coconut Greek yogurt (you can also use plain)
- Pineapple juice
How to Make Bircher Muesli
To make, simple add old-fashioned oats, wheat germ, ground flaxseed, dried pineapple, sliced almonds, and coconut flakes to a large bowl.
Pour coconut milk into the mixture and stir until well combined.
Cover bowl with plastic wrap and place in fridge for at least four hours, but ideally overnight. I love making this piña colada bircher muesli in the evening and then enjoying it the next morning.
Right before you're ready to enjoy this breakfast cereal, stir in Greek yogurt, and ⅓ cup pineapple juice. And, or course, sprinkle on some more dried pineapple, almonds, and coconut if you desire.
Everyone likes their bircher muesli at a different consistency. Some like a thinner, more liquid-y muesli and some like a thicker, more oatmeal-like one. You can continue adding pineapple juice in until you get to the consistency you like.
Also, if you're eating this over several days, I recommend adding in a splash of pineapple juice each morning before enjoying as the oats and grains will continue absorbing liquid as the cereal sits in the fridge.
And I've successfully made piña coladas for breakfast! While also being kind of healthy? I feel like I need to pat myself on the back for that one!
Yes, this piña colada bircher muesli is fairly nutritious in that it's packed with whole grains. Of course, it also has sugar in it from the dried pineapple, coconut, and pineapple juice. But come on, it's pretty impossible to make a piña colada without sugar.
I added a cherry on top for visual appeal, but I'm sure most people don't consider maraschino cherries breakfast fare.
Bircher muesli is a wonderful summer breakfast and the perfect way to enjoy a delicious version of oatmeal when it's hot out.
The flavors in this piña colada bircher muesli are absolutely delicious and though a splash of rum would make it a bit more authentic, I'm pretty happy with this early morning option for a frozen cocktail.

Piña Colada Bircher Muesli
Ingredients
- 1 ½ cups old-fashioned oats
- ⅓ cup wheat germ
- ¼ cup ground flaxseed
- ½ cup dried pineapple, plus more for topping
- ¼ cup sliced almonds, plus more for topping
- ¼ cup coconut flakes, plus more for topping
- ¾ cup unsweetened coconut milk (the kind in a carton)
- ¼ cup coconut Greek yogurt (can substitute plain)
- ⅓-1/2 cup pineapple juice
Instructions
- In a large bowl, mix together oats, wheat germ, flaxseed, dried pineapple, almonds, and coconut flakes.
- Pour coconut milk into the mixture and stir. Cover bowl with plastic wrap and place in fridge for at least four hours, but ideally overnight.
- Before serving, stir in Greek yogurt, and ⅓ cup pineapple juice. If you like your bircher muesli a bit thinner, add remaining pineapple juice in. If you're eating museli over multiple days, you may want to stir a little more juice in immediately before serving.
