Perhaps not too many people can claim to have an entire arsenal of risotto recipes, but I love making it so much that I am constantly coming up with new risotto recipe ideas.
To me, arborio rice is like a deliciously and satisfying creamy blank slate and you can incorporate so many ingredients and incredible flavors into it.
Risotto is also fabulous because it can be enjoyed as an entire meal or it can be served as a side dish.
